Ingredients
Cauliflower florets (small)
Pasta (spaghetti or fettuccine)
Garlic (minced)
Olive oil / butter
Eggs (2)
Parmesan cheese (grated)
Black pepper, salt
Optional: mushrooms, parsley, veggie bacon
Steps
Boil pasta till al dente; reserve some pasta water.
Cook cauliflower in a pan with olive oil till golden & tender.
Add garlic and sauté briefly.
Whisk eggs + parmesan + pepper in a bowl.
Combine pasta + cauliflower off heat, then mix in egg sauce (avoid scrambling).
Add pasta water to make it creamy; garnish & serve.
