Ingredients

  • Cauliflower florets (small)

  • Pasta (spaghetti or fettuccine)

  • Garlic (minced)

  • Olive oil / butter

  • Eggs (2)

  • Parmesan cheese (grated)

  • Black pepper, salt

  • Optional: mushrooms, parsley, veggie bacon

Steps

  1. Boil pasta till al dente; reserve some pasta water.

  2. Cook cauliflower in a pan with olive oil till golden & tender.

  3. Add garlic and sauté briefly.

  4. Whisk eggs + parmesan + pepper in a bowl.

  5. Combine pasta + cauliflower off heat, then mix in egg sauce (avoid scrambling).

  6. Add pasta water to make it creamy; garnish & serve.
